Welcome to Sabaku Farms, where seasonal flowers, regional produce, and the quiet beauty of Northern New Mexico come together to create a thoughtful, place-rooted agricultural experience.
Honoring my Japanese heritage, Sabaku—meaning “desert” in Japanese—reflects our deep connection to the land that surrounds us. The farm is located in Chimayó, nestled in a valley downstream from the Santa Cruz Reservoir. Here, the stark beauty of the high desert badlands gives way to the cooling shade of old-growth cottonwoods, sustained by the life-giving waters of the Santa Cruz River and our community acequias.

Founded in June 2024, Sabaku Farms has dedicated half of this years field to growing the local landrace chile, the Chimayó Red Chile, which is the primary food crop. This culturally significant chile anchors our growing efforts and connects us to generations of farmers who have stewarded it before us. The remainder of our field is devoted to seasonal flowers, and even in the quiet of winter, the promise of future blooms keeps us dreaming and planning for the seasons ahead.

Looking forward, we are committed to carefully trialing additional high-value crops that may thrive in our unique high desert environment. Crops such as Saffron, known for its resilience and low water needs, offer exciting possibilities for sustainable diversification. Through small-scale experimentation and observation, we aim to identify crops that honor our climate, conserve water, and support the long-term economic vitality of the farm.

Equally important to our vision is the preservation of the old-growth apple and pear trees rooted in this land. These trees are living figures tied to the agricultural history of Chimayó, carrying genetic diversity, regional adaptation, and stories worth protecting. Through careful pruning, propagation, and stewardship, we hope to extend their lives and share their fruit—and their legacy—with future generations.
